Chicken Salad

I love grocery shopping and Costco is the mecca of all grocery stores to me. When I walk through the doors I want to fling my arms open, sing and dance around like Julie Andrew does on top of the mountains in The Sound of Music. (I know I'm dating myself) There is something about being able to buy food, furniture, clothes and so many others things all in one store. And you can't forget about the free samples. Although I would recommend going on a week day for those or you may be standing in what seems like an amusement park like line to get them. I have many things I love there but my newest find is the pretzel buns. My husband and I love to make sliders out of them, make a sandwich or just toast it up with some butter. (everything taste better with a little butter, although my husband says bacon) I also love the fact that they sell a whole rotisserie chicken for $5 everyday.

Being that I have a VERY active 10 month old and needs mommy's attention a lot I need a fast go to for lunch. So I would like to share my delicious chicken salad sandwich.

Ingredients:
pretzel buns
chicken finely chopped (I used the rotisserie chicken and just debone it)
green onion to taste
1 avocado
light mayo (optional)
1 stalk of finely chopped celery
chopped cilantro or parsley
1/2 tablespoon garlic powder
salt and pepper to taste
(you can always add halved grapes and or chopped walnuts or slivered almonds, just didn't have them on hand)
Mix all ingredients together expect for the pretzel buns. Cut pretzel bun in half and toast. Spoon ingredients onto pretzel bun and ENJOY.
 

I keep this chicken salad on hand a lot. Its great to use it as a dip for crackers or just eat as is if you want to avoid the carbs. I hope you enjoy it.
